Our wines are low-fi made possible due to the excellent fruit quality and are pure reflection of where they were grown and made. They are handmade by Nikki Palun whose philosophy is to gently coax the natural expression of the vineyard.

The grapes were first sorted in the vineyard through careful handpicking and then again in the winery on a sorting table. The additions are few and we try to use only wild yeasts so as to preserve the unique characters of the single vineyard blocks and the winery. 

We small batch ferment, carefully following the grapes during their journey, gently coaxing rather than being bossy about the final direction of the wine. The wines are all matured in oak French barriques and hogsheads, using a mix of new, one and two-year old barrels.
